Salona Lahm (Lamb)


It is one of the most popular and authentic dishes  of the UAE, usually it is served on lunch time، it consist of fresh vegetables and lamb and served with rice.
Stew ingredients:

1kg of chopped Lamb, 80% boiled
1 big chopped potato
2 chopped zucchinis
1 chopped carrot
1 chopped sweet green pepper
1 eggplant
3 chopped tomatoes
2 to 3 finely chopped onions
3 crushed garlic cloves
2 to 3 tespon of tomatoes paste
2 Loumi (dried lime)
Salt as desired
1/2 teaspoon of each cumin, coriander, cinnamon, black pepper and cardamon powder
1 teaspoon of turmeric powder
1 teaspoon of Emirati fish spices (to enhance the flavor)
1/2 chopped coriander
2 tablespoon of chopped parsley
1 to 2 green chilli pepper (optional)
3 tablespoon of ghee
1/2 litter of hot water

Preparation method

fry the onions in a pot and add in the crushed garlic and Loumi
Add the boiled lamb to the pot, mix well then add the spices
Add the tomato paste and some water
Cover the pot for 2 minutes until you smell the aroma of the spices and lamb
Add the chopped vegetables and mix well
Add the remaining amount of water
Cover the pot and leave it until the meat and vegies are cooked
